Abstract:The relationship between the total signal amplitude and water content of olecranon peachesduring storage was established by using LF-NRM (low-field nuclear magnetic resonance) technique as y=1. 280 8x -12. 17 (R 2 =0. 982 6). With the passage of time,the moisture content of the three kindsof olecranon peach decreased,with the greatest decrease of the free water,followed by the non-flowingwater and the lowest decrease of the binding water. In addition,the fluidity of the three kinds of waterwas weakened,and the degree of binding water is the greatest. The changes of moisture content and totalmoisture content of the three kinds of olecranon peach were related to respiration intensity and hardness.The increase of respiration intensity was accompanied by the decrease of water content,and the hardnesswas significantly positively correlated with the water content.
