Superfine grinding technology is the key technology of the modern food processing at home and abroad which has the characteristics of fast grinding speed,high material consumption rate,less pollution,small and homogeneous powder diameter,etc.Based on the latest research results at home and abroad.Superfine grinding technology could be improved dissolution rate of bioactive substances such as polyphenols,flavonoids and soluble dietary fiber,be developed new functional food and flavor food,and be increased the biological waste resource utilization of application were reviewed.Finally,the superfine grinding technology and its application prospect in food processing were discussed.
