Abstract In order to study the ability of Camellia semiserrata seed oil to scavenge free radicals, the DPPH, ABTS+· and hydroxyl radical scavenging rates were determined by different concentrations of the raw safflower oil and semi-refined safflower oil, respectively, to compare the antioxidant activity of tea oil with different refining degrees. The results showed that the scavenging effects on free radicals of safflower oil was distinctly. The scavenging rate of free radicals increased with the concentration of oil. When the test concentration was 10 g/L, the DPPH scavenging rates of the raw safflower oil and semi-refined safflower oil were 23.46% and 10.98%, respectively, and the ABTS+· scavenging rates were 17.39% and 11.45%, respectively. When the test concentration was 2.5 g/L, the scavenging rate of hydroxyl free radicals reached 26.39% and 19.06%, respectively. The results show that the scavenging ability of raw safflower oil to three free radicals was stronger than that of semi-refined safflower oil, with the greatest ability to scavenge the hydroxyl free radical.
